With a variety of rich colours and nutritional benefits, this salad is more like a salsa than a traditional salad. Served on a bed of salad greens, dressed with a lime vinaigrette and accompanied by a crusty chunk of sour dough bread it makes for a crisp vibrant cool mid-day meal.
Ingredients
1/2 cup sliced green beans
1 cucumber, diced (White Wonder)
1 can black beans, drained and rinsed
1 1/2 cups corn
1 red pepper, diced (Carmagnola Rosso)
1 cup diced tomatoes (Principe Borghese)
1/2 cup chopped parsley1 1/2 cups oriental greens and mixed lettuce
Juice of 1 lime, and a little grated zest
1 avocado, diced
Salt and pepper to taste
Method
Combine the green beans, cucumber, black beans, corn, red pepper, tomatoes, and chopped parsley in a bowl. Squeeze the fresh juice from the lime onto the salad and add a little of the finely grated zest, and give it all a good stir.
This salad (minus the avo) can be prepared and dressed the night before and left covered in the fridge for the flavors to fully develop. Just before serving, rinse the salad greens, and use these as a base, add the avo, season well and enjoy!
